Elaïo takes its name from ἐλαία, the ancient Greek word for olive. At this rooftop restaurant in Nice, above the Promenade des Anglais, that word has guided everything. A hidden gem in the heart of Nice, Elaïo is where locals and travelers alike come to experience the Mediterranean the way Chef Marc Salichon knows it. As he puts it: “The olive is more than just an ingredient. It's a culture, an emotion, a memory. I love working with it as a living material to reveal its many nuances.”
