"The olive is more than just an ingredient. It's a culture, an emotion, a memory. I love working with it as a living material, to reveal its many nuances."— Marc Salichon
Elaïo
Elaïo - from the ancient Greek ἐλαία, meaning "olive" - embodies the Mediterranean art of living at its most generous, authentic, and sun-drenched. Perched on the 10th floor of Le Méridien Nice, the panoramic terrace offers a true escape suspended above the Baie des Anges.
With a seasonal cuisine inspired by southern ingredients and local craftsmanship, Elaïo celebrates the olive in all its forms - a tribute to the emblematic Mediterranean tree, symbol of peace, sharing, and indulgence.
As part of this philosophy, Elaïo partners with Clos de Laure, an artisanal house based in Nice, to enhance its dishes with exceptional oils and products. A local collaboration that reflects our commitment to quality, proximity, and true flavour.
More than just a restaurant, Elaïo is a full experience: a bright lunch, an aperitif at sunset, or a dinner wrapped in the city's evening lights… Every moment of the day has its own unique taste.
What does "Elaïo" mean?
Elaïo comes from the ancient Greek ἐλαία, meaning "olive". A symbol of peace, generosity, and the Mediterranean spirit, the olive lies at the heart of our identity, our cuisine, and our philosophy.
