"The olive is more than just an ingredient. It's a culture, an emotion, a memory. I love working with it as a living material, to reveal its many nuances."— Marc Salichon
The concept of Elaio restaurant in Nice

Elaïo — from the ancient Greek ἐλαία, meaning "olive" — embodies the Mediterranean art of living in its most generous and sun-drenched form. Perched atop Le Méridien Nice, its panoramic rooftop offers a suspended escape overlooking the Baie des Anges.
Inspired by seasonal ingredients and southern craftsmanship, the cuisine celebrates the olive in all its forms — now enhanced by Lucangeli olive oils.
From lunch under the sun to dinner overlooking the sea, each moment at Elaïo is an invitation to slow down and savour.
